The moment when the olive becomes olive oil is sacred. And it is treated as such. Extraction is carried out using modern methods, under controlled conditions, with the aim of preserving the natural characteristics of the fruit. The process is entirely mechanical, with no chemical processing. This is where the aroma is born. This is where the flavor is defined. This is where quality is secured.
Malaxation is perhaps the most misunderstood stage. And yet, it is one of the most decisive. The olive paste is gently mixed at controlled temperatures, allowing the oil droplets to combine without losing their valuable aromatic and nutritional components. We do not pursue quantity—we pursue the purity of the result.
After malaxation, the olive oil is naturally separated from the water and solid residues. The process is carried out with precision, without haste and without aggressive practices. The goal is not simply to produce oil. The goal is to produce the right oil.
Olive oil needs time to settle. And the right conditions to be protected. It is stored in stainless steel tanks, away from light, air, and heat. There, it stabilizes, develops balance, and prepares for the next stage. Storage is not passive waiting. It is active care.
Bottling is the final stage—but not the least important. It is the moment when the olive oil takes on its identity. Filling is carried out in a controlled environment, under strict standards of hygiene and traceability. Each bottle, each package, carries within it not only olive oil, but the entire journey that came before it.
