All our products are 100% Extra Virgin Olive Oil, with no processing beyond natural extraction. Their acidity consistently remains at exceptionally low levels, ranging from 0.2 to 0.8 in oleic acid, and they are bottled exclusively under the designation “Extra Virgin Olive Oil”—not as a label, but as a result.
Place and time
Messinia and the wider Kalamata region are among the most renowned olive oil–producing areas in the world. The microclimate, the soil, and the olive variety create a unique combination that gives the oil its intensely fruity aromas, a peppery finish, and a vibrant green color. Harvesting begins each year in November, at the moment when the fruit reaches its optimal stage of ripeness. The olives are collected using gentle, manual methods to ensure they remain intact and healthy, and are transported to the mill without delay. Here, time is not a detail—it is a critical factor of quality.

Olive oil is not a static product. Throughout its lifecycle, it undergoes natural and chemical changes. For this reason, its quality is not judged only at the moment of production—it is continuously monitored, measured, and evaluated. Acidity is one of the most important and widely recognized quality criteria. It expresses the percentage of free fatty acids in olive oil and is measured as a percentage. Oxidation, also known as rancidity, is one of the most serious forms of olive oil deterioration. The peroxide value indicates the extent to which the oil has begun to oxidize due to exposure to oxygen, light, or heat. Ultraviolet absorption indices (K232 and K270) act as a chemical mirror of olive oil. The K232 index reveals the early stages of oxidation. The K270 index indicates advanced degradation or potential adulteration. Together, they provide a clear picture of the product’s purity and freshness. The ΔK index, as a mathematical relationship between these values, is used to detect possible blending with refined oils or seed oils. For us, authenticity is not verified by words—it is proven in the laboratory.
Organoleptic evaluation — where the senses speak
Beyond numbers and analyses, olive oil is also judged by the senses. Organoleptic evaluation relies on smell and taste, revealing elements that no analysis can fully capture. Color comes from the olive’s natural pigments—chlorophylls and carotenoids. Aroma and flavor arise from dozens of volatile compounds—hydrocarbons, aldehydes, ketones, and esters—that shape the character of each olive oil. Here, quality is not measured. It is experienced.
